Little Bit of this and a Little Bit of that……
I made these muffins, and they are FABULOUS. The BEST thing about them – they are only 1 point on the Weight Watchers point scale. I really have no idea how they come up with their points per food, but it has something to do with fat and fibre and calories and……..whatever.
They are Zucchini Muffins, and here’s the recipe.
- 1 cup flour
- 1 cup whole wheat flour
- 1 1/2 tsp baking powder
- 1/2 tsp of baking soda
- 1 tsp cinnamon
- 1/2 tsp all spice
- 1 tsp salt
- 1 egg
- 1/4 cup unsweetened applesauce
- 1/2 cup Splenda
- 1 cup grated zucchini
- 1/2 cup skim milk
Measure all 7 dry ingredients into a bowl. Stir well. Make a well in the center.
Beat egg in bowl until frothy.
Mix into egg – applesauce, Splenda, zucchini and milk.
Pour into dry mixture. Stir only until moistened.
Bake @ 400 degrees Fahrenheit for 20 – 25 minutes.
They are a little drier than muffins made with oil, but store them in a air-tight container and they will be moister than if you just leave them out.
It make 12 muffins, and they are one point each!
I eat them with 1 tsp of REAL BUTTER, and it is so delicious. 2 points total for this delicious treat. YUM!

I Foiled Jon’s Hair.
Do you remember me talking about Jon’s hair when we came back from Victoria? Well, I just went back through my archives, and apparently I didn’t. It was that bad! His roots were about 6 inches long, and He was not happy with how he looked, and so we did his hair. BOY, DID WE DO IT! I was a little nervous about “trying ” to foil it and just put in some blond highlights so we bought some bleach that came with a cap. He wanted bigger chunks, and so I pulled a ton of hair through the cap. Apparently I was a little over zealous, (but in my defense – the cap was not see through and so I had no idea what I was doing). I colored the entire top of his head blond. It was hideous. I tried to say that it was okay, but really I was cringing on the inside. I was almost sick when I realized what I had done. He’s lived with it for a couple of weeks now, and Saturday night we decided to try again. He was that sick of it that he asked me to try again…..WOW! It really was that bad!
I had been given a box of Chestnut reddish brown. It had been sitting in my bathroom cabinet for a couple of months. I wondered if it would work, and told him that I’d try to foil it. This was scary for me, ’cause what if I messed up. We decided that if it was BRUTAL bad, them he’d go to Save-On that night, ’cause they were open until midnight, and we’d just die his hair all one color.
So I started, He even offered that we should take a picture, but I was too scared that it wouldn’t turn out, and frankly I really didn’t want another record of a big huge screw up.
The first couple were about as difficult as I thought they’d be. After doing a few, I kinda got the hang of it. Although I’m sure there’s a trick how to get all the way down to the roots. I just need to go in one day and watch my sister-in-law do a few clients hair. Liliane is an amazing hairdresser. If you live anywhere close to Willingdon and Lougheed in Burnaby. Go and see her! The salon is called Chez Liliane!
Any how, I managed to foil his head, but I was nervous because the color looked awfully purple. I kept stressing that he’d have this very pretty, very obviously girlie color in his hair, and then I’d feel like a HUGE failure for managing to muck up his hair twice in a row.
He processed for about 20 minutes after I finished the last one, and then we went to wash it out. I was so stressed it, that I wanted to rip his head off his body and make him hurry up! It seemed to take forever. Finally he shows it to me, and it looked like there was NO MORE BLOND! That wasn’t exactly what he wanted either. So I made him “DO” his hair. I tried to do 50 – 50 blond and this brown color. I think that because it’s just the first wash that it’s darker than it will be. Hair lightens up when you wash it. It is darker than he’d like, but I think that it 2 weeks it’ll be perfect. YAH! I didn’t mess it up too badly!
Here he is in all his glory! Bad picture, and he’s not done anything with it today. Oh the joy’s of working from home. Throw some clothes on (on good days) and crawl down to your hole office and bang out some websites!

It does look a little reddish, but he does have naturally reddish hair, and so I’m trying to convince myself that it’s okay! You know how even when something looks okay, because you did it – you can see everything thing that’s not perfect, but have a hard time seeing what looks good! Yah! That’s me! Oh well! He’s taking off for Indonesia – another post for another day – on Thursday night, and I’ll get to see what it looks like in 2 weeks when he gets back!
We also carved pumpkins this weekend, and as soon as I sort through the photos, I’ll post them all! Hope you all have a great day!

oh yah he just looks absolutely thrilled in the first pic!! I think it actually looks good now!! I was wondering when he was leaving 2 weeks! wow!

I think Jon’s hair and beard match much better. The colours seem similar and look more natural.
I never stress over hair… I figure you can always recolour, cut and grow it back…be adventerous!
Years ago I coloured my hair for a play I was in… I got used to all the stares and whispers, after awhile I had to remind myself why people were looking at me funny, I kept forgetting I had blue hair!

I like the latest color. I do agree the blond was a little much…. but everyone has to learn some how.
Patti I think you did a great job on fixing it.
That is how you learn. When I was 15 I decided to cut my own hair. I gave myself a few really bad hair cuts but I actually learned how to do it so that it was not too bad. It is called tuition.
