Mmmmmmmm! Food!

Well, this diet of mine is so restrictive. I’ve not really felt bad about it, and have done really well since the beginning of November when I first went on it.

It’s only just been recently that I’ve been wanting more……more variety….more….yah, more variety.

I’ve eaten eggs just about every single morning for breakfast for the past 2 months. That’s getting old quickly! I could make a goat cheese omelet, but I HATE GOAT CHEESE! It is SO strong tasting, and I can’t handle it. Makes me gag! I tried, really I did, but for me – goat cheese is the pits.

I really want some bread of some sort, but seeing as I can’t have yeast, that makes it a bit difficult. I did find some Almond Rice bread that was sweetened with fruit juices, and made with baking soda, but it’s sitting in my freezer right now ’cause it’s disgusting. Seven dollars worth of disgusting. That’s the hardest part of this whole thing. I hate throwing money away, and yet I’m desperate to find some good stuff.

I tried to make some tortillas out of Spelt flour, but they didn’t turn out very well. I found out later that it’s the type of flour that it is. It’s very light. I need a heavier flour. Out searching again……..

Kamut PuffsI tried some biscuit mix that was wheat free, but it was made with beans and again DISGUSTING! Seriously! Do they think that people who want to be healthy will just eat any bit of garbage that they throw out there? I’m not opposed to beans, but when the biscuits take like dirt and sawdust mixed together….NOT GOOD!

The Naturopath had given me a recipe for a dessert type food. It’s called KAMUT squares. It’s very similar to Puffed Wheat Squares. You make it with 1 cup of a Nut Butter (I used almond) and 1 cup of Brown Rice Syrup (It’s a sugar substitute) and then 4 cups of Kamut puffs.

Kamut Puff SquaresThe Rice Syrup and Almond Butter combine to make a caramel flavored sauce, and then you mix in the puffs, and press it into a pan and cut into squares. It’s pretty good tasting. But I found that I can’t eat a ton as I’m not used to pounding back the sweet stuff. That’s okay though. I’m going to stick it in the freezer, and have a treat whenever I fee like it.

Almond MilkI also bought some Almond Milk. I had tried Rice Milk before, and it was okay, but not DELICIOUS. While the Almond Milk is not regular milk, I can handle it. I had a bowl of cereal today – the Kamut Puffs – and with the vanilla flavored Almond Milk it was pretty good. I’ll be having that again. I’ll probably buy some Puffed Rice because it’s just so cheap at Superstore, but it’s so nice to have a little bit of variety.

I also bought some organic Maple Syrup, and have a recipe for Spelt pancakes that I want to try out. It should taste pretty good. I’m looking forward to it. Maybe tomorrow!

Do any of you have any healthy recipes that you could share? I’m trying to stay away from sugar, but I can substitute it for honey or Brown Rice Syrup or Maple Syrup….I can’t have Milk either, but again, I can use the Almond Milk to substitute. Hopefully I can find a few things that will work for me.

So, got any recipes for me? Ideas? Thoughts?
