Peanut Butter with………..EVERYTHING!

Jon and I (and the kids) did the MAJOR shopping trip(s) yesterday. He got paid, and we had enough for rent and all our bills, and even some left over to go grocery shopping.

It’s funny, but with this new way of eating, most of the stuff that we are going through is perishable. My cupboards are almost empty. I did clear them out on Saturday after we got home, and while I keep telling myself that it’s not a problem that they are mostly empty, I have to admit that I keep thinking that something is wrong ’cause they are not stocked full of boxes of stuff.

We popped into Costco first (although if any of you are Costco shoppers, you’ll know that there is no such thing as just popping in to Costco on a Saturday afternoon), and I only wanted to pick up a flat of 5 dozen eggs, some low dose Aspirin, and to get my prescription filled. When I went to the pharmacy to request a refill, they lady told me that it would be a 45 minutes (or more) wait to pick it up. YUCK! So, rather than stick around and wait, we just left, and headed into Langley.

I had run out of the two flours that I’m using, and needed to pick up more from the Organic Store. We dropped the kids off at my parents ’cause the store is only about 5 minutes away form their house, and headed over. We had seen a Booster Juice sign on our way in, and thought that it looked interesting. We had decided to check it out with no kids, and see if it would be something that we could get the kids as a treat or not.

OH. MY. GOODNESS! Where have you been all my life? It was freakin’ amazing. We had this one smoothy that we split, and got them to ditch the yogurt so it was dairy-free. They also added some Calcium supplement to it. It tasted amazing, and the kids would love it, and we were coming back. It also solves the question of where will we get a slurpee in the summer. Not that we get a lot of slurpees, but once in a while is nice, and this is just a really nice treat for the kids, and they LOVED the taste. It was an all round pleasurable experience. If you’ve never been…..find one and go. So worth it!

So, when we got the the Organic store, we started looking for stuff that Jeremy could have. Unfortunately, there really isn’t much! It looks like we’ll be sticking with the fruits, veggies, meats, Red Potatoes, Quinoa, Eggs, Kamut, Spelt, and certain nuts! Yah Us!

What we did find was the most wonderful thing ever. We picked up a jar of cashew butter. J’s not supposed to have peanuts or almonds, but cashews are fine. We thought we’d try it out, and even if he didn’t like ti, Jon said that he would eat it, and so we rounded up the rest of our groceries, and left.

When we got to my parents house the kids were hungry, and I had told my parents when we dropped them off that they couldn’t eat anything. Well, not entirely true ’cause they had apples, and grapes, so it’s not like they were starving, but they were hungry. We pulled out some Kamut bread. I was a bit nervous, ’cause J’s tried this bread before and then gave it back saying it was disgusting. Instead of using commercial yeast, they use a natural leaven. Basically you take flour and water, and let it ferment, then use that to make bread. The end result is a bread made with only flour, water and sea salt. It tastes like a sour dough bread. DELICIOUS! So, we toasted up some of the bread, and slathered on the cashew butter, and he just about died right there in front of us. We got excited, fist pumping action, and then he shared a bite with Papa, but quickly wanted it back, and got upset when Papa threatened to eat it all.

Finally, something that he will eat, that has a bit of protein in it. I breathed a HUGE sigh of relief.

Jon made Kamut pancakes this morning, and the other day, we had to spoon feed them to J with some applesauce. Today, he didn’t want the Maple Syrup (we keep asking) but this morning he REALLY wanted peanut butter on them. As far as I’m concerned, that’s DISGUSTING, but he loved them and eat them up without a fuss, and we didn’t even have to feed them to him. YAH!

Then this afternoon, we had a lunch after church. I had brought soup that I made for our family to be able to eat. My soup was the first to go. It really was that good, and so good for you! Yah Me! Nothing like tooting your own horn, eh? Then because I knew that the kid would still be hungry, and want to eat the desserts, I brought some more bread, and the Cashew butter. The kids munched it down like it was going out of style, and they were so good and didn’t even complain about not getting any of the sugar desserts.

I have to pause here for a moment, and say that I have no idea how or why, but the kids are being AMAZING. We’ve had basically no fussing or complaining about our new way of eating. I don’t know how or why it’s been this easy to do. I’m not sure if it’s because I’ve been whittling their diets back for a while now, or if they really do feel better eating this way or if it just hasn’t sunk in yet or what????? I really don’t know. What I do know is that I have the best kids in the world, and they are making this SOOOOOO easy on us. I love them even more than I did, and I didn’t think that was possible.

On the way home, Jeremy wanted to have another peanut butter sandwich, but we told him no. We staved them off with pieces of fruit until dinner time. When we asked what he wanted for dinner, He said that he wanted a wrap (tortilla) with peanut butter (Cashew). When we told him no, then he said that he just wanted ANYTHING with the peanut butter. Too Funny! I’m going to go through that jar by Tuesday morning if we’re not careful. I’m just so thrilled that now I have something to put in his lunches that he’s happy – no – ECSTATIC to eat!

Some one e-mail me, and asked about what we are eating. Basically kid friendly meals. I think that I might talk about that tomorrow, if I feel like it. I do need to post a picture of me at 21 weeks, ’cause we hit that milestone yesterday, and I’m still feeling good. We are getting closer to the time that Nathaniel died, but I’m hoping to be able to sail through those weeks (24-25-26) without too much stress or worry! We’ll see how it goes. Well, I’m a lot later that I planned on staying up tonight, and so I’m off. Have a great night and we’ll see ya in the morning.

This morning, he asked for peanut butter on his egg whites. BLECH! Too Funny!

    We visit Booster Juice all the time, we have a few in town. Look through your community flyers, they put coupons in them all the time. If your kids sell those community coupon books like Entertainment… they’re in there too (at least out here). It’s well worth the $20, lots of goodies in it.
